The expert points out that almonds contain cyanoglycoside amygdalin (particularly bitter almonds), whose decomposition gives almonds its distinct bitter smell and taste.

“When almonds break down, they produce hydrocyanic acid, which is one of the most powerful toxins known,” she warns.

Voss adds, after the almonds undergo a heat treatment (180 degrees Celsius within 8-10 minutes), this toxic substance will not pose any health risk.

According to her, you can eat no more than 30 grams of nuts per day. “Nuts can be preserved for a long time without losing their beneficial properties and delicious taste. Therefore, they can be eaten during long flights, and in cases where there is no possibility of eating a full meal,” she says.
